Cinco de Mayo!

Who doesn’t love a good Cinco de Mayo celebration!? Try out these two classic recipes to spice up your party!

Aspen Street Tacos

Aspen Street Tacos

Serves 4+ People, approximately 12 small tacos. *This recipe is great for leftovers too!  


  • 2 chicken breast
  • 1 can Aspen Independence Pass Ale IPA
  • ½ yellow onion, diced
  • 2 tablespoons raw garlic, diced
  • 1/2 tablespoon pepper
  • 1/2 tablespoon salt
  • 1 tablespoon cumin
  • 1/2 tablespoon oregano

Before using beer in any recipe, you should pour beer into a large glass and whisk with a fork.  You’re trying to get most of the carbonation out of the beer.  Allow foam to settle and repeat 2-3 times.  

In a large saute pan on medium/medium-high heat add chicken, IPA, diced onion, garlic, salt and pepper, cumin and oregano.  Allow to cook for 20 minutes or until chicken is cooked through.  

While chicken is cooking, prepare the Confetti Slaw.  

Confetti Slaw:

  • ½ cup light mayo
  • 2 tablespoons white wine vinegar
  • 1 tablespoon dijon mustard
  • ½ tablespoon salt
  • ¼ tablespoon pepper
  • ½ of a green cabbage, shredded
  • ½ of a red cabbage, shredded
  • 1 red bell pepper, sliced thin
  • 1 yellow bell pepper, sliced thin

Combine mayo, white wine vinegar, dijon mustard, salt & pepper in a bowl and stir into a smooth and even dressing.  In a large salad bowl add shredded cabbage and thinly sliced peppers, pour in the dressing and mix thoroughly.  In a small pan on low to medium heat, add tortillas of your choice (I prefer corn tortillas) and let them heat up.  Flip the tortillas as necessary. 

Once chicken is cooked through, pull the chicken breasts apart in the cooking pan with a fork and tongs, or two forks, until you have a pan full of shredded chicken.  Add chicken to hot tortillas and cover with confetti slaw.  Enjoy with an Aspen IPA!

Dirty Ashtrays

The Dirty Ashtray... just look at it and you’ll understand the name. But trust me, you will love them. It might be the most delicious sip of beer you will ever have.

Take a cold light beer (Our Silver City Ale, light with subtle lemon tartness is damn near perfect, but a Mexican lager will work great too) and fill the rim with tequila, lime juice, salt, pepper and hot sauce.

Crack it all the way open and take a big sip! Now tell me that is not delicious. Enjoy with amigos.
